MALAYSIAN LAKSA SOUP RECIPE

Makes 2 servings

Ingredients

For paste

1 small chopped onion
3-4 cloves of garlic
1″ ginger piece
4-5 whole red chili
2-3 tbsp lemon grass extract

Other ingredients

1 tbsp oil
1 cup vegetable stock
2 tbsp milk
salt to taste
1/2 tsp pepper powder
1 tbsp boiled salted peas
2 tbsp fried tofu
1 tbsp thinly grated carrot
1 tbsp tomato puree
1 cup boiled spaghetti
2 tbsp mix sprouts
2 sliced olives

Method

1. Soak red chilies for 10 mins in hot water.
2. For the paste, mix & grind all the ingredients.
3. In a heated pan, add oil & paste & saute for 2 mins.
4. Add vegetable stock, milk & all the ingredients.
5. Add 2 tbsp spaghetti, 1 tbsp sprouts in a bowl.
6. Pour soup over it.
7. Garnish it with sliced olives.
